The Mushroom That Eats Meat So You Don't Have To

The crop that people eat to avoid killing animals only exists because it kills animals.

Oyster mushrooms are one of the most popular meat substitutes on this planet. They show up in stir fries, pasta dishes, pulled pork alternatives, even bacon. People eat them because they have this meaty texture and umami flavor that plant based eaters crave. In 2022, the global oyster mushroom market was valued at over $7 billion. By 2032, it’s projected to hit nearly $14 billion.

They grow on dead wood. Logs, stumps, fallen branches. You can buy grow kits online and watch them sprout from cardboard and coffee grounds. They’re easy, fast, and forgiving. That’s why so many people grow them.

But oyster mushrooms didn’t evolve to replace meat. They evolved to eat it.

The problem though… wood is mostly carbon. It’s almost pure cellulose and lignin. But mushrooms need nitrogen to build proteins and DNA. Wood has almost no nitrogen. It’s a nitrogen desert. If you’re a fungus growing on a log, you’re starving for the one thing you need most.

So they hunt.
